In a blender or food processor, mix together avocado, garlic, cucumber, lemon juice and sour cream. Pulse until ingredients are well blended then transfer mixture into a bowl. Season with cilantro, mint, red pepper, salt and black pepper. Stir until mixture is creamy. Cover and refrigerate until ready to serve - can be used as a dipping sauce or a sandwich dressing.

Chicken Soup with Avocado and Lime
What you need:
  • 1 avocado, peeled, pitted and diced
  • 1 tomato, seeded and diced
  • 1 white onion, thinly sliced
  • 8 cloves garlic, thinly sliced
  • 4 jalapeno peppers, sliced
  • 4 cups chicken broth
  • 4 6-inch corn tortillas, julienned and baked
  • 1 cup thin strips of boneless chicken breast halves
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 1 1/2 tablespoons olive oil
  • Salt and pepper to taste

Heat olive oil in a pan over medium heat then cook onion, garlic, jalapeno until tender, about 3 to 5 minutes. Add tomato, chicken broth, chicken strips, lime juice, salt and pepper and simmer for about 5 minutes. When chicken is cooked, stir in avocado and cilantro and heat through. Transfer to soup bowls and top with tortilla strips before serving.
Avocado-Strawberry Green Salad
What you need:
  • 1 avocado, peeled, pitted and sliced
  • 10 strawberries, sliced
  • 2 cups torn salad greens
  • 1/2 cup chopped pecans
  • 2 tablespoons olive oil
  • 2 tablespoons white sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cider vinegar
  • 4 teaspoons honey

Combine avocado, strawberry, salad greens and pecans in a bowl. To make the dressing, whisk together olive oil, sugar, lemon juice, cider vinegar and honey in a separate bowl and drizzle the mixture over salad. Toss to coat. Cover and refrigerate until ready to serve.

Simple Tuna Salad Recipe You Can Make Before Work

To make the dressing:
  • 4 Tb good olive oil.
  •  Juice of 1 whole lemon.
  • 1 Tb Dijon mustard. 
  • A few finely chopped tarragon or basil leaves, to taste, or 1 ½ tsp dried tarragon or 1 tsp dried basil.
  • Fresh ground pepper & Kosher salt to taste.
Then Stir dressing into a salad mix made up of:
  • 2 finely shredded medium sized carrots. 
  • 24 oz canned tuna, drained and crumbled. 
  • ½ bell pepper, chopped. 
  • ½ small onion, chopped. 
  • ½ c pitted and chopped olives. 
  • 2-4 oz crumbled Feta cheese. 
The salad can be eaten immediately after preparing but the combining of all the different flavors is the thing that really makes this dish work. Admittedly it is a little bit more involved than just slapping some mayo and the contents of a tin of tuna into a bowl and stirring in some chopped onion but your taste buds will really thank you for the small amount of extra effort. Serve on a bed of crisp lettuce or with cut tomatoes.

The 'yogurt starter' is just a way of giving the batch of milk all the right yeasts, bacterias and enzymes to encourage it to turn itself into yogurt.  Once the yogurt is made you can refrigerate it to prevent it becoming more sour.



You can use any milk but full-fat milk will give you a more creamy yogurt.  Ultra heat treated (UHT) or 'long life' milk is perfectly fine.

Sugar Free Homemade Granola

Did you grow up with the nutty and wholesome smell of granola in the oven? I didn't, but thanks to this recipe, my mom now makes her own as well!

4 cups rolled oats
½ cup olive oil
½ cup maple syrup
½ cup EACH sesame OR sunflower seeds AND pumpkin seeds
1 cup chopped walnuts, pecans or almonds
1/8 tsp EACH nutmeg AND cinnamon
Dried fruit: craisins, raisins or chopped, dried apricots

Pour oats, seeds and nuts into a square baking pan. Then drizzle the wet ingredients over the top, slowly rolling all together with wooden spoons. Bake at 275 degrees until golden brown. I check and stir every 20-30 minutes.
While cooling, I toss in the dried fruit. We store this on our counter top with a ¼ measuring spoon for a quick snack when needed. I typically double this batch and it lasts us about two weeks.

The thing to remember with homemade granola is that you can change up the measurements and ingredients as you like. For example, switch up the spices, nuts, seeds, or dried fruit to something different and the taste completely changes. What you want to maintain is the ratio of wet to dry, specifically of and for the olive oil, syrup and rolled oats. You can also switch out honey for maple syrup and get a nice crunch with a little sweet. Sometimes that makes all the difference in the world.
Easy to give as a gift, just store in a Mason Jar, tie with a bow and you have yourself a last minute hostess gift, thank you or holiday gift.

Raw Banana Avocado Ice Cream

Many health conscious people are trying to incorporate more raw foods into their diets. They do this for many different reasons, including the preservation of enzymes and important nutrients. Most health care professionals agree that people need more fruits and vegetables in their daily diets, and eating them raw is a natural choice.
I try to eat foods that will contribute to good health. However, I will not give up flavor in my quest for healthy foods. Years ago I stumbled upon a single ingredient recipe for a banana ice cream substitute. It involved simply freezing a banana and puréeing it in the food processor. The author of the recipe promised it would taste like soft serve banana ice cream. It didn't.

The resulting concoction had a watery taste that didn't mimic ice cream in any real way. It was similar to the taste of a banana popsicle, but had no creaminess to it. It wasn't bad; it just wasn't what was promised.
I began to wonder how I could keep this recipe as healthy as it was while making it taste a bit more like ice cream. I tried adding almond milk, coconut cream and a few other creamy products. Nothing gave it the right texture and taste. That is until I added an avocado. I know it sounds weird, but avocados are loaded with good monounsaturated fatty acids. These good fats combine with the banana to create a creamy, tasty treat your taste buds won't believe. Top it with chopped nuts for an even more satisfying snack.

This is what you will need for four servings:
4 very ripe bananas
1 ripe hass avocado
2 teaspoons freshly ground cinnamon or nutmeg (optional)
Directions:
Cut the bananas into one inch slices. Put into a sealable bag and freeze for at least twelve hours. Transfer the bananas to the food processor work bowl, fitted with a multi-purpose blade. Let sit at room temperature for five minutes to slightly thaw. Process until smooth. Add the avocado and spices (if desired) and continue to process till well combined. At this point it will be the consistency of soft serve ice cream and can be served as is. If you want a firmer texture, return it to the freezer for 30 minutes. Do not allow to completely freeze or it will become too hard.

Four bunches of kale, rinsed and patted dry with a towel, and chopped into one inch sized pieces.
Four tablespoons of olive oil.
One teaspoon of sea salt.
Two tablespoons of nutritional yeast.
A food dehydrator.
Start by making sure to wash your kale under cold water, then pat dry with a towel or cloth. Then chop up the kale into one inch sized pieces. Next place organic chopped kale into a large bowl and add the olive oil. Now you need to gently use your hands and massage the oil into the kale leaves until they are evenly coated with the oil. Then you sprinkle the sea salt onto the mixture and again gently massage into the kale leaves. The last ingredient is the nutritional yeast flakes. You may need to go to a natural foods grocery store to find nutritional yeast flakes. Sprinkle the yeast flakes evenly onto the kale leaves. The final step is to spread the kale leaf mixture onto your food dehydrator to be dehydrated at around one hundred ten degrees. By dehydrating at the lower temperature of one hundred ten degrees, all of the life force energy of the raw kale leaves will remain alive, therefore not losing the valuable living enzymes of the plant for your health and nutrition. Dehydrate anywhere from six to eight hours, depending on the efficiency of the dehydrator. After six hours check and eat a kale chip to see if it is crunchy enough according to your preference.
